Which component seals the joining surfaces of a cylinder and its head?

A gasket

Sealing the join between the cylinder surface and the cylinder head is done with a gasket. The head gasket is a specially shaped, compressible seal that sits between the two flat mating surfaces and, when the head is torqued down, deforms to fill microscopic gaps. This creates a reliable barrier for combustion pressure inside the cylinder and for oil and coolant passages that run through the block and head, preventing leaks and mixing of fluids.

O-rings are designed for circular grooves and different sealing applications, not the large flat interface between a head and a block. A sealant bead can help in some assemblies but isn’t capable of withstanding the long-term high temperatures and pressures seen at the head-to-block joint. A silicone washer isn’t suitable for this high-stress, high-heat engine sealing task.
